Question
What produce can I plant now (in the fall) in raised flower beds? I need ideas for 4 unattended raised beds that must be low maintenance, easy to grow, and virtually pest free (because it's outside of a daycare).
Answer
Fall is a great time to plant cool-season vegetables, many of which are low maintenance. Below is a list of easy to grow veggies, I would recommend starting with radishes, carrots and greens as they all can be started from seed and are quick to harvest. The greens will sprout quickly and can be harvested while the plants are young to make a great salad. Radishes and carrots will sprout quickly and can be harvested in just a few weeks.
Greens:
- Arugula
- Kale
- Spinach
- Chard
- Collards
- Mustard Greens
Root Vegetables;
- Onions
- Green onions
- Carrots
- Radishes
- Beats
- Potatoes
- Fennel
Other:
- Cabbage
- Broccoli
- Brussel sprouts
- Cauliflower
- Peas
- Beans
Follow the planting instructions on the seed packets and plant in fertile well-drained soil and you should have veggies in no time. The majority of vegetables produce best with regular fertilizer applications. I recommend using an organic granular fertilizer that can be sprinkled on the soil surface and watered in.
