I picked mexican black bean prematurly and wondered if I can keep them in a condition that will allow them to finish ripening?
Answer
Yes, you can finish the black beans indoors by spreading the pods out in a warm well-ventilated location allow them to fully dry. The pods should turn yellow and begin to split open when they are completely dry. Once dry you can store in a dry location for up to a year. Ideally you would leave the pods on the plant until the pods turn yellow and the beans are dark black.
