Winter Squash And A Hard Frost

We have hard frost coming and I have many Rumbo and Argonaut that still have a lot of green. They have started turning, will they finish ripening? I know to leave the stem long.


Answer

Wither squash will tolerate a light frost but once temperatures dip much below 30 F degrees you are at risk of losing the squash. If temperatures are expected to drop below 30 F degrees I would go ahead and harvest, your Rumbo and Argonaut Squash will continue to ripen (cure) indoors. The common time of year for harvesting winter squash like Butternut, Rombo, Acorn and Argonaut is September through October.
