Winter squash is a warm-season vegetable. Unlike summer squash which are harvested before maturity, winter squash are harvested and eaten in the mature fruit stage, when the seeds within have matured fully and the skin has hardened into a tough rind. The hard rind allows winter squash to be stored for longer periods of time. Plant as soon danger of frost has passed. Winter squash have a spreading vining habit, so be sure to give them enough room. Some varieties include Delicata, Acorn, Spaghetti, Butternut and True winter squash.
