Star Jasmine (Trachelospermum jasminoides) require moist well-drained soil conditions, overly wet soil conditions can lead to root rot. From your description it sounds like a root problem and due to the severity I would assume it is some abiotic disorder which caused the root issue. Dry conditions can also lead to leaf drop if it is sever enough. Salinity toxicity will also lead to color change and leaf drop however generally the leaves change to a yellow-white before dropping.
